It is hard to find a dish as healthy and affordable as lentils with rice. This recipe is my creation, after making hundreds of different curries, i have come up with this version. It is really tasty and aromas in a kitchen are unbelievable.
Lentils- 300 g
Onion- 1 (finely diced)
Curry leaves- one stem of leaves
Yellow mustard seeds- 1/2 tea spoon
Garlic- 4-5 cloves
Ginger- 1 inch
Coriander ground- 1 tea spoon
Cumin ground- 1 tea spoon
Turmeric- 1 tea spoon
Black pepper ground- 1 tea spoon
Red chilies (optional) if you like hot food, add 1 tea spoon
Canned crushed tomatoes- 1 can
Boiled water- 2 cups
Oil or ghee
Thoroughly wash lentils and soak it in a water for an 1-2 hours.
I always get spices ready before hand, so you don’t have to run around looking for them.
Heat an oil or ghee in a pot, add curry leaves and mustard seeds, wait for them to pop. Add diced onion, reduce heat to medium and stirring frequently fry till soft and golden color.
Add chopped/crushed garlic and ginger to onions and fry for a couple of minuets.
Now add all your spices, and fry them really well, stirring all the time, if the mixture is too dry add more oil/ghee. After stirring for 2-3 minuets, add drained lentils and stir for 2-3 minuets.
Add canned tomatoes and stir it in, then add 2 cups of boiled water, stir, cover, reduce the heat to a minimum. It should take 30-40 minuets to get ready. Return to it frequently and stir, if necessary add more water. Taste it, if the lentils are soft, your meal is ready. At this stage i take out half of lentils and blend it, till smooth, then add it back to the pot. You will get a nice mixture with smoothness and a bit of crunch.
You should start on your rice now, so all is ready at the same time. I use rice cooker for my rice, and i find it the only and best way to make perfect rice.
You can have lentils on it’s own, or with rice.
