I absolutely love this cake. Every time i make it during parties,even skinny girls on diet ask me for another piece.
But if you really look at ingredients it has mostly eggs and strawberries, with not much sugar and flour, sweet omelette with strawberries, basically.
If you are familiar with making sponge cakes, you can make it your usual way. My oven has been playing up lately (due to overloading) and instead of one large sponge cake, i had to make two, but still got my four layers.
You will need to make a sponge the day before, as it needs to sit for at least 8 hours ( make sure you cover it with kitchen towel). So,it takes two days to make the cake. Even though, it looks complicated, it is not hard to make.
I have no particular reason of making this cake today, i have lots of strawberries and i love it.
Ingredients:
For the sponge:
Eggs- 5
Sugar- 200 g
Flour- 100 g
For the Meringue:
Egg whites- 3
Sugar- 150 g
Vanilla sugar- 1 tea spoon
For the strawberry sauce
Strawberries- 500 g
Sugar- 100 g
Water- 200 g
For a whipping cream:
Fresh cream- 600 ml
Icing Sugar- 50 g
Strawberries for decoration- 500g
Directions:
Make a basic sponge cake. let it sit overnight or for 8 hours, under a tea towel.
Beat egg whites with sugar for meringue, bake for 12 minuets on 180C. Set aside.
Wash strawberries and remove tops and half them. Put in a pot with water and sugar, boil for 10 minuets, strain and let it cool.
Whip fresh cream with icing sugar, set aside.
Cut your sponge in 4 pieces.
Slice strawberries.
Put cream+strawberries+cream+another sponge+cream+meringue+cream+sponge+cream+strawberries+cream+sponge+cream+decoration strawberries.
