I absolutely love this dish! Every time i go Indonesia or Singapore or China, i order this.
Since i know, how it supposed to be/look, here is my recipe.
Chicken- 1 breast fillet, cut in thin strips.
Rice- 2-3 cups of cold cooked rice
Onion- 1 sliced in half rings
Garlic- 5 cloves chopped
Ginger- 2 inch chopped
Cabbage- 1 cup shredded
Kecap manis- 2 tea spoons ( important)
Shrimp paste- 2 tea spoons
Soy sauce- 1 table spoon
Sambal oyelek- 2 tea spoons ( if you don’t have it, don’t worry)
Oyster sauce- 1 tablespoon. (important)
Base oil- i am using olive- tablespoons
Sesame oil- 2 teaspoons
Salt, pepper to taste.
Fry an omelette with each egg, and shred it to strips, set aside.
Heat an oil and fry onion, ginger, garlic and shrimp paste for a couple of minuets.
Add chicken and prawns, cook for 3 minuets, constantly stirring.
Add cabbage, keep on stirring till cabbage softened rice, stir.
Add the rest of the sauces , salt ,pepper and eggs. Done.
Should be served with fresh cilantro and spring onions, bout i don’t have any.
Serve hot, but cold or reheated still nice.
