i would recommend using baby potatoes for this dish, as they taste better and take less time to cook, not to mention look pretier than older potatoes.
i steam them first, and roast in the oven later. If you haven’t got a steamer, you can boil potatoes till half cooked.
Even though cooking time is quite long, the process is very easy.
ingredients:
Potatoes- 1.5 kg
Rosemary- 5 stems, leaves removed,
Garlic- 6 medium sized cloves, chopped
Olive oil- 1/3 of a cup
Salt, pepper.
Directions:
Wash potatoes and steam them whole until half cooked.
When half cooked, cut each in half, transfer to a baking tray, mix in garlic, rosemary leaves olive oil, salt and pepper.
Roast in the preheated oven at 200C for 45 -60 minutes, depending on the oven. Move them around every 15 minutes, incorporating all the ingredients together.
I like the skin to be crispy, but of course you can cook it to your liking.
Hi alina! \Will definitely try this. I tried the pan fried version wherein I preboil the potatoes before frying them. I think they would taste differently. Didn’t use garlic though. I had garlic infused oil on hand so I used that.
