I love one pot meals like salads, soups or rice/ noodle dishes. I have a big family and it works well for me.
This is another one meal option, fried rice.
The most important thing to understand about fried rice , that it should be “fried”, not soggy at all. In order to achieve that you have to prepare rice first.
1 cup of rice, prepare as normal, I do it in a rice cooker. Spread it in a wide dish and leave in the fridge overnight. Just before you go to sleep break it with a fork or hands to a small pieces.
In the morning, take it out and completely break it, so each grain is separated ( it’s not hard to do at all) and leave it in a fridge until cooking time.
Ingredients:
Prawns-250g, each cut in 3-4 pieces.
Carrot-1 grated
Green peas( frozen)- 2/3 cup
Onion-1 large, cut in half rings
Garlic-3 cloves chopped
Soy sauce- 3 tablespoons
Chili sauce- to taste
Oil
Spring onions chopped for a finishing touch.
Directions:
Prepare rice as mentioned above.
Heat an oil in a wok, add onions, garlic, keep stirring till onions softened, add peas and a carrot, keep stirring. And than add prawns, cover it for a minute, keep stirring.
At this stage I put container with rice next to my wok and start adding a handful of rice at a time and mixing it with a prawn vege mixture. Do that until rice is finished.
Sprinkle with spring onions and serve.

I make this one at home. And it sometimes depends on the availability of ingredients. Sometimes I use beef, pork, or chicken (left overs HEHE) instead of prawns. My version contains egg, shredded cabbage or chopped kangkong (swamp cabbage?). I add a bit of sesame oil as well just for the aroma. 😀 This is what I like about fried rice because you can basically throw stuff in depending on your preference. It is such a versatile dish. 🙂

Absolutely agree! you can make many variations of fried rice. “Anything goes” lol, that is why i do not order it in restaurants, as they intend to dump all the leftovers there.
