I remember years ago, when I was a little girl, a Russian chef came to our house and showed me how to prepare it. I have never forgotten the recipe. Interestingly enough traditional recipe has mushrooms at all and used butter and sour cream. I do have an issue with using together beef with sour cream and butter. But unfortunately there is no equal substitution, to get the real taste of the dish, better not to make it at all.
i only use good quality fillets for this recipe, as it makes huge difference.
The other important thing, it’s best to be served with fries. I always make my own freshly cut chips, that takes much more time to make than Beef Stroganoff. The combination is truly incredible, and traditionally it never served with rice. Mashed potatoes will be second best option.
Beef fillet- 1 kg cut in thin strips
Onions- 2 large cut in half rings
Sour cream- 1/2 cup
Tomato paste- 2 tablespoons
Flour- 1 tablespoon mixed with cup of water
Butter- to taste
Heat butter in a saucepan, with some oil. Add beef, salt, pepper,stir occasionally. First beef will release the juices, when all juices released add small piece of butter and keep on stirring. Add onions and keep on stirring till meat and onions are slightly browned. At this stage add tomato paste and incorporate with meat and onions.
Stir in sour cream. And finally add flour mixed with water. Add more water if necessary. Cover it for a minute and it’s done.
