I had a serious craving for a Japanese Cuisine today, so all i made was teriyaki Chicken, Tempura Vegetables and Sushi Rice. Beautiful combination!
For Tempura you can use pretty much anything, but in my today’s selection- sweet potato, french beans and broccoli.
Flour plain- 1 cup
Corn flour- 1/2 cup
Sparkling chilled mineral water (I love San Pellegrino)
Sweet potato (small)- cut in long thin strips
French beans- 5-10 pieces trimmed
Broccoli- small head, broken in florets.
Oil- sunflower or any of your choice around 8 cm deep.
I used to make it in a deep fryer ( was much easier) but it couldn’t take pressure and died, so i am just using a pot now.
Heat and oil in a pan or deep fryer.
Mix both flours and slowly add chilled water, whilst stirring, keep on mixing till a thick cream consistency.( hands are the best tool for it)
Dip your vegetables, one by one into the tempura batter, shake an excess. And immerse inside heated oil, do not overfill, otherwise they will stick to each other. Cook till the batter becomes hard, and the vegetable nice and crunchy inside.
Take it out to a plate, line with a paper towel, so extra oil will be absorbed.
Enjoy with a soy sauce, in my case i will enjoy it with Teriyaki Chicken and Sushi Rice.!!!
