One of my family favourites, great for any time of the day. I just had three of them for lunch, and who is there to decide, when and what we should eat. Soup or steaks for breakfast, cake for lunch, scrambled eggs for dinner, all these are great options. Traditional breakfasts has never been my thing, I would rather have a Bloody Mary….I don’t actually eat breakfast (maybe on holidays), just kidding.)))
I used to make this dish, without an apple, but I tried it and now I much more prefer it. Apple adds moisture and a nice taste to cakes.
Ingredients:
Cottage cheese-500g look for harder type
Egg-1
Egg whites-2
Flour-120g
Apple red-1 grated
Baking powder-1/2 teaspoon
Pinch of salt
Sugar-3 tablespoons
Flour for assembling
Icing sugar for dusting
Oil for frying
Directions:
Put all flour through the sieve mix in baking powder snd set aside.
Mix the rest of ingredients add flour , mix well.
Dust a cutting board with flour . Form patties and lay them on a board, you will need to hold a patty in your hand and dust it on all sides (all over).
Heat an oil in a frying pan and cook them on medium/high heat till nice golden and cooked through.
Should be perfect for two batches, do not overcrowd the pan.
Serve with icing sugar. You can have them with butter, sour cream, jam whatever you prefer. Taste good cold or reheated.
Alina, these look so interesting. I am going to attempt a grain-free version to see if I can achieve a similar result. These will be perfect for the cooler autumn weather we are experiencing.
