Salad Fattoush. Lebanese Cuisine.

This is probably one of the healthiest and tastiest salads you can ever find. It’s full of antioxidants and vitamins, just beautiful.

I have made my own pita breads, that I used for making chips, and i will post the recipe later,(if anybody is interested, let me know, so I can write faster).

Sumac spice is a very powerful oxidant and can be easily obtained.

Pomegranate molasses has a very strong flavour and I would suggest you try it before adding to a salad, if it’s too strong for you, just omit.

Ingredients:

Romain lettuce- 1/2 head torn/ chopped 

Lebanese cucumber-1 peeled and cut in thin half rings.

Radishes-3 cut in thin half rings 

Tomatoes-3 medium, chopped 

Green onions-3 chopped 

Fresh mint- a handful , chopped 

Fresh parsley- handful, chopped.

Garlic-2 cloves, grated/ crushed 

Juice of half a lemon 

Olive oil-3-4 tablespoons 

Sumac- 1-2 tablespoons.

Pomegranate molasses-1-2 teaspoons 

Salt-1 teaspoon.

Pita bread chips- i made chips with 3-15cm in diameter breads.

Directions:

Start with preparing chips. Separate two layers of pita bread and cut them in pieces. Sprinkle with sumac and drizzle with olive oil, bake in the oven at 220C. Let it cool.

   
    
   
Mix all your prepared vegetables and keep in their fridge, till ready to serve.

  
I like to mix garlic and all the rest of ingredients together in a bowl, it’s not necessary , but makes it easier.

  
When ready to serve add the dressing to a salad toss your chips in and enjoy!
