I love the idea of baking in the oven, just do a little preparation, stick the dish in the oven and you can do whatever you want, whilst your meal is cooking.
They are thousands of baked potatoes recipes on internet, but i still decided to share mine with you.
Potatoes- 1 kg, peeled and thinly sliced.
Onion- 3 medium, cut in half rings.
Mushrooms- 200 g, sliced.
Cheese- 250 g, grated.
Milk, water- enough to cover the potatoes.
Fresh cream- 300 ml.
Milk- 300 ml.
Sour cream- 3oo ml.
Garlic- 2 cloves, grated.
Fresh thyme- 1 tablespoon.
Salt, pepper, paprika- to taste.
Oil for frying.
Boil sliced potatoes in a milk/water mixture for 10 minuets. I find this step necessary, as it shortens the cooking time in the oven and potatoes come out nice and soft.
Preheat the oven to 225C.
Rinse potatoes under cold water and let them cool slightly.
Fry onions and mushrooms, till browned and set aside.
In a bowl mix fresh cream, milk, 2/3 of cheese, garlic, salt ,pepper, paprika and fresh thyme.
Get your baking dish ready and start assembling.
Drizzle a little oil at the bottom of your dish and lay the first layer of potatoes.
Put 1/3 of your potatoes, followed by half of the onion mixture and half of the cream mixture.
Repeat this step.
Finally spread the rest of the cheese, the amount will be determined by the width of your dish, as you need to cover the top with cheese.
Cover the dish with foil, cook in the oven at 225C, for 45 minuets, then increase the heat to 250C ,remove the foil and let it brown ,should take around 15 minuets.
Take the dish out of the oven and let it sit for at least an hour ( put the foil back on).
