I got a fresh duck today, yayyyy, i know it’s funny but getting a fresh duck in Perth is quite a challenge …Anyway, i am making it with veggies and spices, hot and hot!
Ingridents:
Duck- 2kg.
Potatoes- 4 medium, cut in quarters .
Egg plant- 1 diced.
Onion- 2 chopped.
Garlic- 6 cloves, chopped.
Chillies- 3 red, chopped.
Oregano – 2 tablespoons, chopped.
Tomatoes- 4 medium sized , cut in wedges.
Smoked paprika 1 teaspoon.
Oil.
Directions:
Heat an oil in a pan and add duck pieces, cook till browned.
Het a large pot, and add duck pieces into it.
Set aside, to the same pot add onion , cook for a couple of minuets, add garlic, cook for a further minute .Add potatoes and smoked paprika, cook till potatoes are slightly browned.
Add to a large pot.
To the same frying pan add egg-plants and cook till fragrant, add to a pot.
To the same frying pan add chillies, oregano and tomatoes cook for a couple of minuets.
Add to a pot with a duck and the rest.Cook for an hour with a lid closed.
Looks so good. I will try it next time when I get a duck. 🙂

Yum those flavours sound amazing Alina – I would have thought duck would be fairly easy to come by over in Perth – here in Sydney you can order it from most butchers….
