It’s a variation from my other recipe “Lamb Chops in Red Wine”, that i came up with today. It makes it easier, as you have a one pot meal. should satisfy 2-3 people.
Onion- 1 large- cut in quarter rings.
Tomatoes- 1 can.
Red wine- 1/2 a bottle.
Cumin seeds, coriander ground, cumin ground- 1 teaspoon each.
Turmeric- 1/2 teaspoon.
Culantro for garnishing.
Oil.
Salt, pepper.
Directions:
heat an oil in a frying pan, add cumin seeds, let it brown and add potatoes, cook till scorched in places, add turmeric, cook for a minuet. Set aside.
To the same pan, add a bit more oil and lamb chops, cook till browned on both sides. transfer to a pot.
To the same pan, add onion and cook for a couple of minuets, add coriander and cumin ground, stir and cook for a minuet, add canned tomatoes, cook for a further 3 minuets.
Put potatoes on top of the lamb pieces in the pot, then your onion mixture and wine. Cover reduce the heat to a medium and cook for 45 minuets.
Garnish with a cilantro. Serve with a fresh salad.
Looks fine dining restaurant quality. Great recipe!
