These are sold in every corner and cooked in every house of East Africa. Definitely a favourite dosh of that region. Mandazi can be used as breads and as dessert.
Ingredients:
Flour- 3 cups.
Coconut milk- 370 ml.
Sugar- 1/2 cup.
Yeast- 1 sachet.
Cardamom ground- 1/2 teaspoon.
Egg- 1 bitten.
Oil -2 cups.
Directions:
Mix a sachet of yeast with a 1 tablespoon of sugar and 1/4 of cup of warm water, cover and let it rise.
Then stir in the rest of ingredients and kneed a dough for 10 minutes.
Cover, and let it rise and double in size.
When doubled in size, heat an oil in a pan.
Divide the mixture into 4 parts.
Roll each part into a circle 15cm in diameter and 1 cm thick. Cut each circle into 6 triangles.
Fry in hot oil till nice and browned.
Eat the way it is as a bread or sprinkle with an icing sugar, and turn it to a dessert.
